Exaltation: the collective noun for a group of Larks.
This is a blend of Cabernet Sauvignon, Shiraz & Merlot, made in the style of an Italian “Super-Tuscan”. Each batch of fruit was selected for expression of varietal flavor and great fruit concentration, before being aged in old French oak for 24 months. We have cellared this wine for you – it is now ready to drink with lovely rich flavours and very fine, rounded and integrated tannins. It is perfect with rich meat dishes or a mature cheese.
This is a style we aim to emulate in the future, with our next “Exaltation”, the 2009, now quietly maturing in French oak barriques for the year or more to come.
